3. Peanut Butter and Jelly Ice Cream

  • 3/4 cup strawberry sauce (ingredients below)
  • 2 cups full-fat coconut milk

For ice cream:

1. In blender, add coconut milk, strawberry sauce, egg yolks, vanilla and salt and blend until smooth.

2. In ice cream maker, pour mixture and churn according to ice cream maker instructions until mixture is thick.

3. Add strawberries.

4. In bowl, add butter and coconut sugar, mix and let cool to room temperature.

5. When ice cream is churned, pour a layer into a container and drizzle with butter mixture. Repeat with more layers and end with layer of ice cream. With a butter knife, swirl ice cream.

6. Freeze for 1 to 2 hours.

4. Carrot Coconut Truffles

  • 1 cup peeled and shredded carrot

6. Chocolate Protein Cake

9. Caramel Apple Pie

4. Pour mixture onto crust and freeze for at least 45 minutes.

10. Watermelon Slushie
